I may, or may not be getting a little carried away with my culinary torch. Last week I posted my Summer Berry Torte and since then I’ve been hooked. Basically, I just want to bake things so I can torch them, which means I’m whipping up an array of treats full of sugary goodness; like these Toasted Mallow Treats.
Problem: I’ve got to keep this sugary goodness out of my house … it’s my baking dilemma. I love (with a capital L) to bake, I just don’t want it to stay in my house! So, I guess this is my invitation for you to stop by and eat all my sweet treats, ha. Thankfully, my kiddos classmates will be enjoying these toasted treats.
Now, if you’re like I was a few months ago and you haven’t added a culinary torch to your arsenal of kitchen gadgets, don’t fret; you can still make these ooey gooey treats. I’ve made this recipe many times without toasting the marshmallows and it still turns out fantastic.
Toasted mini marshmallows. You may have to do this in several batches if you cannot toast all 4 cups at the same time.
Intruder alert: someone has just snagged one of my mallows.
Cover the top of the treats with more toasted marshmallows, cool completely, cut, and cover before serving.
Toasted Mallow Treats
Prep time: 8 minutes / Cook time: 4 minutes / Makes: 1 9x13 dish / Serves: 16
Ingredients
12 cups mini marshmallows
6 cups rice crisp cereal
5 tablespoons butter, plus extra for buttering dish
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
Instructions
- Butter a 9×13 glass dish, set aside.
- Place 4 cups of mini marshmallows in a separate bowl, set aside. (If you are using a culinary torch, toast the 4 cups of mallows and let them set while you make the mixture).
- In a large pot, over low heat, melt butter, stir in 8 cups of mini marshmallows until melted.
- Remove from heat, stir in vanilla extract and salt.
- Once combined, stir in all 6 cups of rice crisp cereal.
- Take two cups of the (toasted) marshmallows and combine into the mixture.
- Press mixture into buttered glass dish and top with the remaining 2 cups of (toasted) marshmallows.
- Cover with plastic wrap and allow to cool completely before cutting into squares and serving.
Notes
These treats will keep for several days in the refrigerator, but are best if enjoyed the same day.
You can also add chocolate chips or a chocolate drizzle to the top of these treats.
Voilà. Toasted, crispy, ooey gooey, crunchy, chewy, sugary goodness to share with your favorite peeps.
Don’t be surprised if I post another toasted sweet treat next week. I’ve been dying to make a crème brûlée.

Thanks. They are so FUN to make, but if they lay around here then I will eat them! So, it’s best that they are given away, ha. The kids always comment about how we give all our goodies away (don’t worry, it’s only after they have had their fill). It’s been good for them to expand their view of service, even in this little way. They learn that we can put others needs and wants before ours, and that we can share the things we treasure; which often brings us greater joy.
