chicken breast, 8 oz • 1 C flour • 1 egg, lightly beaten
1 C organic bread crumbs • 1 tsp garlic powder • salt & pepper
These moist and tender chicken skewers are perfect for your next party or even quick kids snack. A flavorful crispy breading on the outside makes these chicken bites perfect for dipping. I served these skewers with a honey mustard dipping sauce at my sons carnival birthday party over the weekend. I’m not sure if the chicken or the dipping sauce was more of a hit. For a kids party they make a great meal because you just pick up the stick and eat, it’s quick, easy and makes less of a mess … which is always a plus for me!
Preheat oven to 400 degrees F.
Directions: Cut chicken breast into about 1-inch pieces. In 3 separate bowls place the flour, egg and breadcrumbs. Toss chicken in flour, coating well, then dip into the egg and finally coat with breadcrumbs. Bake on a lined baking sheet for about 25 minutes or until golden brown. Allow enough time to cool and skewer. Serve immediately with a dipping sauce, I suggest honey mustard.
Honey Mustard Dipping Sauce
3 T dijon mustard, I like using the whole grain seeded kind
3 T honey
3 T mayo
Directions: In a medium size bowl mix the mustard, honey and mayo until smooth. Serve or refrigerate immediately.

notes: I actually season my chicken with salt, pepper and garlic powder about 30 minutes before I bread and bake. When cooking chicken I always like to layer my flavors so that the chicken doesn’t seem bland. Then I enhance my flavors with sauces and other dips. When seasoning chicken before you bread it make sure you use a dry rub because the coating will less likely stick to a wet chicken, hence that is why you coat the chicken in flour first.
