8 oz bittersweet chocolate, chopped • 1 C heavy cream
If you frequent my blog you may have been wondering why I haven’t blogged the last few days … or has it been a week! Let me reassure you that all is well but between my constant nausea from the pregnancy and the sicknesses plaguing my kiddos at the moment … survival has been the only goal in my mind. Thankfully a friend of ours just had a birthday which kicked me into gear to do something. I made a chocolate bunt cake and dolled it up with some fancy ganache and chocolate chips on top. I love ganache because it is so rich in flavor and so easy to make. In case your wondering what ganache is; it’s basically cream and chocolate mixed together to make a delicious chocolate sauce. I love to make bunt cakes and serve it with ganache because it cuts my prep time in half. Instead of waiting for the cake to cool completely then make the icing and frost the cake, all I have to do is heat, stir and pour. It really is just that easy and oh so good.
Prep chocolate by chopping it into small pieces
Place chopped chocolate in a medium heatproof bowl. In a small saucepan over medium heat, bring the cream to a boil. The cream will rise up in the sauce pan, quickly take the cream off the heat and pour over the chopped chocolate. Let chocolate set for a minute or so in order for the cream to melt the chocolate, then stir from the center out until chocolate is melted and the smooth and creamy. Be careful not to stir in air to the ganache. Now the sauce is ready to use over you cakes, cookies and ice crream! Enjoy.
Makes about 2 cups
tip: If you don’t have time to make a cake from scratch you can always make a boxed mix and pour this ganache over it for added flavor and flare.
… wishing you a Merry Christmas and a Happy New Year!
