1 1/2 C flour • 2 tsp baking powder • 1/4 tsp baking soda
1/2 tsp cinnamon • 1/2 tsp pumpkin pie spice • 1/2 tsp salt
1 T flax seed • 1 egg • 1/2 tsp pure vanilla extract
1/2 C pure maple syrup • 1/4 tsp maple • 2 T canola oil
1/2 orange zest extract • 1(15oz) can organic pumpkin
1 streusel recipe • 12 baking cups
You will quickly learn that fall is my favorite season. One reason is because there are so many wonderful hearty ingredients readily available this time of year. To kick-off fall the right way I have whipped up a taste bud teaser and added some spice to one of our favorite fall foods, pumpkin. Imagine with me, fresh pumpkin pie, fragrant spiced cider with orange, warm maple syrup, crunchy pecan streusel, this muffin is a compilation of all. Preheat oven to 350 degrees F.
Line muffin pan with baking cups and set aside. In a large bowl combine flour, baking powder, baking soda, cinnamon, pumpkin pie spice, flax seed and salt, mix well and set aside. In a medium size bowl combine egg, pure vanilla extract, maple extract, pure maple syrup, organic pumpkin, oil and orange zest, beat on medium speed for one minute. Continue to beat as you add the flour mixture one cup at a time until the mixture becomes hard to beat. Then, using a wooden spoon or spatula, finish stirring ingredients and spoon about a tablespoon into baking cups. Place about a teaspoon of streusel in each baking cup. and add another layer of mixture and streusel to top. Bake at 350 degrees F for about 20 minutes or until tops begin to crack and turn golden brown.

3 T flour • 3 T brown sugar • 1/4 tsp cinnamon
2 T butter • 2 T pecans, chopped
In a medium size bowl combine flour, sugar and cinnamon. Cut in butter until mixture resembles course crumbs. Add in pecans and mix well.
