1 C sugar • 1/2 C butter, room temp • 2 eggs, beaten
1 T milk • 1 tsp pure vanilla extract • 2 1/4 C flour
1/4 tsp salt • 2 tsp baking powder
This past weekend we celebrated our daughters 2nd birthday at our home with some close family and friends. The planned theme was a backyard garden party … but the storm that hit right as we finished setting up had other plans, downpour. So, the party turned into an indoor garden party, fun times. Eventually the rain stopped and all the kids went outside to play in our flooded backyard and eat these yummy cookies. It just goes to show that although not all things seem to go as planned, some things still turn out the way you thought they would. These sugar cookies with buttercream icing are a recipe you can count on, unless you forget to set your timer! My friend WH always makes this recipe for her girls birthday parties and they always turn out amazing so I begged her to share. Thanks for sharing! Hope you all will enjoy these as much as we do.
Preheat oven to 375 degrees F.
Cookie Directions: Line baking sheets with parchment paper and set aside. Cream sugar and butter together. Once creamy add in the eggs, milk and vanilla. In a separate bowl sift the flour, baking powder and salt, set aside. Once wet ingredients are combined mix in your sifted dry ingredients together, I add the dry ingredients about 1 cup at a time. Roll out dough on a lightly floured surface, about 1/4 inch thick. Use your favorite cookie cutter shapes and place cookie on lined baking sheet. Bake at 375 degrees F for 9 minutes exactly! Allow cookies to completely cool before icing. You can also freeze these cookies and decorate at a later date.
Buttercream Icing
4 C powder sugar, sifted
1/3 C butter, room temp
1/4 C milk or heavy cream
1 tsp pure vanilla extract
food coloring
Icing Directions: Beat the sifted powder sugar, butter and vanilla extract together. Once combined add milk and blend until smooth. Add more milk to thin out icing if you desire. Add food coloring as necessary. Now your icing is ready for decorating! Store cookies in an air tight container in the freezer or refrigerator if you will not be eating them right away.
