tomato and spinach scramble with avocado

December 4, 2012

2 eggs  •  2 egg whites  •  1 tomato, large size and diced
1-1 1/2 C baby spinach leaves, fresh  •  dash of garlic powder
1/2 avocado, medium size, sliced  •  1 tsp feta cheese, crumbled
pinch of sea salt  •  pepper to taste  •  extra virgin olive oil as needed

As you read this you may or may not be thinking, where has this girl been? It’s crazy how a month will go by and I just don’t have time to sit down and blog. Yes, my three kids under four do pose a challenge among my other responsibilities. To be honest, one of my biggest hurdles has been my husband and I’s small changes in our diet that have left me experimenting more in the kitchen, leaving me with healthier dishes but no exact recipe to share with you! Thankfully, After a month of experimentation, and many food blunders, think I have finally mastered at least a few dishes we now enjoy in our attempt to eat even healthier! First, I’d like to share with you a simple yet yummy breakfast scramble that even your kiddos will like, my Tomato and Spinach Scramble with Avocado. To cut out some of the cholesterol and fat I use two eggs and two egg whites. Leave the carbs behind, high in protein and vitamins, this breakfast dish will give you a jump start to your sluggish morning and wow your taste buds.

Directions: In a medium size skillet, saute spinach and tomatoes in the extra virgin olive oil and season with the garlic powder and salt. Once vegetables are tender set aside. In a small mixing bowl whisk together eggs, I don’t use milk or water because I feel the eggs become too runny when combined with the juices from the vegetables. Prep skillet with a non-stick spray and scramble eggs on a medium heat. Once eggs begin to stick together add in the sauteed vegetables. Pepper eggs to your liking, plate eggs and top with freshly sliced avocado. Serve this with a side of your favorite salsa, may I suggest my Fresh from the Garden Salsa. You can also serve with turkey sausage for a more hearty meal.
