1/3 C brown sugar • 1/2 C onions, chopped • 2 T olive oil
2 cloves garlic • 1/2 tsp chili powder • 1-2 tsp paprika
salt & pepper, to taste • red chili flakes optional
It’s not the first meat I choose to buy when I go to the store … but if all pork tasted this good, maybe I would. These slightly sweet and spicy chops are oh so tender, you’ll never need a knife. The smokiness of grilled pork chops makes this dish even more mouth watering. I like to serve these chops over a bed of mashed potatoes, specifically my sour cream and chive mashed potatoes and a side of grilled corn and squash.
Line crock pot and set to low.
In a medium size skillet sauté onions with olive oil on a medium heat until translucent. Add garlic, ketchup, tomatoes, brown sugar and spices, simmer on low for about 10 minutes. Meanwhile, arrange pork chops in crock pot, then pour sauce over them. Cook on low heat for 6-7 hours or until the chops are nice and tender. The meat should fall off the bone when they are ready to eat.
Serve them with the sauce alone or over mashed potatoes.

notes: These chops are amazing in the crock pot alone, but if you have some extra time on your hands, first throw them on the grill and get a nice char on them and then place them in the crock pot and add sauce. I prefer grilling the meat first, it adds to the smokiness and overall makes a more flavorful meat.
